Cilantro Potatoes

Ingredients
4 minced cloves of garlic
1 bunch cilantro, fresh
2 pounds of Russet potatoes
1 tablespoon of Italian seasoning
Pinch of red pepper flakes
Pinch of salt and pepper
1/4 cup of olive oil
1 stick butter
1/4 cup of Parmesan cheese, grated
Preheat the oven to 400 degrees. Generously butter a rectangular Pyrex dish. Peel and cut the potatoes in thin slices – the thinner, the crunchier they become. Put the potatoes in a bowl and gently mix them with the parsley, cilantro, seasoning, pepper flakes, salt, pepper, olive oil and half the cheese. Transfer the seasoned potatoes into the Pyrex® dish and put it in the oven for 30 minutes. Afterwards, add the remaining cheese and cook until it melts. Enjoy!
