Aunt Dawn's Crazy Loco Eggnog Banana Bread

Ingredients
  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/4 cup eggnog (you can make your own eggnog but store-bought works too)
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground nutmeg, divided
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking soda

This is a spin on my Aunt Dawn's Crazy Loco Eggnog recipe.

Preheat oven to 350 degrees. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each one is added. Beat in bananas, eggnog and vanilla. In another bowl, whisk flour, baking powder, 1/4 teaspoon nutmeg, salt and baking soda; gradually beat into banana mixture. Transfer to a greased 9x5-inch loaf pan; sprinkle with remaining nutmeg. Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool. One loaf sliced in 1/2-inch slices should serve around 16 people.
