Aunt Carolyn's Candied Yams
By Cathy López Negrete
Ingredients
- 3 cups mashed yams
- 1/2 cup light brown sugar
- 2 eggs
- 1/2 cup melted butter
- 1 teaspoon vanilla
- 1 small can of PET(R) milk
- 3 dashes of cinnamon
- 1/2 cup dark brown sugar
- 1/2 cup flour
- 5 teaspoons butter
- 1 cup of pecans (crushed)
Aunt Carolyn has always brought these candied yams over to the house for every Thanksgiving. Not only do we look forward to it every year, but we enjoy it for days afterward.
Preheat oven at 375 degrees. Combine yams, light brown sugar, eggs, melted butter, vanilla, PET milk and cinnamon well in a KitchenAid(R) and place in a casserole dish. In another bowl combine dark brown sugar, flour, butter and pecans. Place on top of potato mixture and bake at 375 degrees for 30 minutes.
